Ingredients
  

  • 2 cups frozen corn kernels
  • ½ cup full-fat coconut milk
  • ½ tsp garam masala
  • ¼ tsp toasted, ground cumin
  • 1 tbsp extra-virgin olive oil
  • 2 tsp garlic paste
  • ¼ tsp paprika
  • tsp red chili powder
  • tsp pink salt

Instructions
 

  • In a skillet over medium heat, add in the olive oil.
  • Once hot, add in the garlic. Stir it around for a minute.
  • Add in the corn kernels. Sprinkle over the garam masala, paprika, red chili powder, cumin powder and salt. Stir this around for two minutes.
  • Lastly, add in the coconut milk and turn the heat to high.
  • Continue to stir, allowing the coconut milk to thicken. This will take a couple minutes.
  • Once the coconut milk has thickened and achieved the desired "creamed corn" consistency, turn off the heat.
  • Serve as a side dish, garnished with green onions or herbs as desired. Enjoy!
