Sugar Free Vegan Breakfast Parfaits
Today we are making Sugar Free Vegan Breakfast Parfaits! This recipe is a mouthful to say … but also a mouthful to eat! The orange and blueberry layers complement one another so perfectly, I might just have to try this recipe again with a different combination (cherry and dark chocolate anyone)? Anyhow, I was contemplating on the title of this one for about 15 minutes…
It went from Orange Blueberry Yogurt Parfait to Orange Yogurt & Blueberry Compote Chia Pudding and every other combination of oranges, blueberries, chia seeds and yogurt.
We’ve all heard the whole “breakfast is the important meal of the day,” with filling breakfast recipes all over the Internet like overnight oats for those complex carbs, oatmeal breakfast cookies made of flax eggs, breakfast bars, high protein sweet potatoes, black beans & tofu scramble, the kale green smoothie on those busy mornings, french toast, vegan waffles for the sweet tooth, protein powder smoothies and every breakfast under the sun. But have you ever had a blueberry compote & orange yogurt parfait?
What is Compote?
Compote is the French word that means mixture, which comes from the Latin word compositus with the same meaning. Originating in Medieval Europe (17th century France), it is a sweet fruit sauce consisting of whole fruits, either fresh or frozen, mixed with sugar. The process of making a compote cooks the fruits with sugar on the stove until they mesh to form a sauce!
The reasoning behind the compote? The French believed that fruit cooked in sugar balanced the humidity’s effects on the body! Compote can be served as jam with biscuits, either hot or cold, with a variety of spices or flavors mixed in. Think cinnamon, nutmeg, orange peel, ground almonds and more!
Over time, compote became a staple in Jewish cuisine as well, because of the simple, dairy-free ingredients used. Now compote can be topped with whipped cream, vanilla sugar and more. It can also be prepared by soaking dry fruits in water and adding alcohol. Did you know March 1 is actually National Compote Day?
Layers of This Recipe
This healthy breakfast recipe takes about 15 minutes, has no added sugar and has two layers of simple ingredients. The first layer is a citrus yogurt consisting of vegan yogurt blended with a fresh orange and sweetener. The second layer is blueberry compote, made by cooking down sweet wild blueberries with coconut sugar. Add this one to your morning routine – make it the night before and leave it in the fridge to eat the whole thing in one go!
The fresh fruit layers are put together for a nutritious breakfast or snack recipe! I personally loved the warm compote on the cold yogurt, but you can refrigerate the entire parfait to eat it later too. This could also make a great lunch-on-the-go, if you keep a cold pack in your lunch pail.
Why You’ll Love These Sugar Free Vegan Breakfast Parfaits
Homemade Yogurt Flavors & Compote: This vegan recipe is a tasty breakfast recipe that layers homemade yogurt flavors! Rather than buying pre-made, sweetened yogurts with various flavors, I love making these at home.
You’re also able to customize the blueberry compote to different berries, such as a raspberry, cherry, cranberry, strawberry or blackberry compote. Or, make a lemon or lime yogurt instead of orange. The possibilities are endless with these combinations!
Substitutions: Fruit & Yogurt
Vanilla Coconut Milk Yogurt: Find what vegan yogurt works for you! I used this brand of coconut milk yogurt, which is thick and creamy texture like yogurt should be. For those on a plant-based diet, vegan yogurt can be hit or miss. Some people might not like the aftertaste, but I got used to it.
You just have to dry different brands until you settle on a vegan yogurt that works best for you. Otherwise, it might ruin the taste of any recipe you use it in. Different vegan yogurts use different bases and levels of sweetener. For example, almond milk, oat milk, cashew milk, coconut milk, soy milk and other plant-based milks create a different flavor and texture when used as a yogurt base.
Read the ingredients to find a yogurt that doesn’t use refined sugar in it, to keep this recipe refined sugar-free. I preferred the brand linked above (Riviera) because it has no added sugar, has Vitamins B12, D and A added and has 4 grams of protein per serving. It is also GMO free and of course, is high in probiotics are most yogurts are!
Wild Frozen Blueberries: I always go with frozen berries since they are pretty much the same as fresh ones. (If not better, since frozen fruit is picked when it’s ripe rather than importing it when it’s not in season?)
Wild blueberries also have a sweeter taste (berries are great for natural sweeteners!). They are also cheaper than buying packs of fresh blueberries. However, you can probably get away with using any type of berry, whether fresh or frozen. Try raspberries, blackberries, cherries or strawberries here!
Substitutions: Sweetener
Maple Syrup: Liquid sweetener works best for the yogurt. It blends thoroughly rather than leaving little crunchy bits that don’t dissolve in the yogurt like coconut sugar or xylitol might do. I would leave this for last. Only add it after you’ve blended the yogurt with the other ingredients, if you feel that it needs to be sweeter.
Maple syrup has different levels. The more robust maple flavor comes out in the darker colored syrup, which are lower grades. Grade A syrup is the lightest in color and has the lightest molasses flavor to use here.
Coconut Sugar: Dry sweetener works best in this recipe for the compote. You can try to substitute this with monkfruit sweetener, xylitol, brown sugar or a different type of dry sugar.
