Broken Wheat: Broken wheat (which is not the same as cracked wheat – it’s slightly different but you can interchange them for this recipe) is a whole grain made by cracking wheat kernels into smaller pieces. It’s less processed than refined flour but still retains the bran and germ.
It can be used in a variety of dishes, from porridge to savory pilafs, upma, and salads. Swap in buckwheat groats or millet for a gluten-free option, since broken wheat does contain gluten.

Sweet Broken Wheat Jaggery Porridge (Gur Ka Daliya)
Equipment

Ingredients
- 1 tbsp refined coconut oil
- ½ cup dry broken wheat
- 2 cups oat milk unsweetened
- ¼ cup jaggery grated
- 2 tbsp fresh coconut cut into thin slices
- 2 tbsp roasted cashews chopped
- pinch pink salt
Instructions
- Heat coconut oil in a pan. Add the broken wheat and roast on low heat for 3–4 minutes until fragrant.
- Add milk and cook on low heat, stirring occasionally, until the broken wheat softens (about 10 minutes)
- Stir in the jaggery. Let it simmer for 5 more minutes until the jaggery melts and blends in.
- Mix in coconut, cashews and a pinch of salt.
- Let the porridge sit for a few minutes to thicken. Serve warm, garnished with extra coconut!
