Substitutions

Vegan Sweetened Condensed Milk: There are a few brands of vegan sweetened condensed milk that you can buy online, or you may even find them in a grocery store chain. I usually find this at my local grocery store. Some common brands are Let’s Do Organic and President’s Choice.

Walnuts: Swap the walnuts for pecans.

Chocolate Chips: Use vegan semisweet chocolate chips, chunks or a chopped chocolate bar. Make sure there’s no milk or milk powder added to the chocolate (so it’s vegan). Swap in with dark chocolate, which will be a bit more bitter (60-70% dark chocolate would be okay, anything more might be too dark).

For added decadence, try a mix of vegan semisweet chocolate and vegan white chocolate chips.

Coconut: Sweetened shredded coconut works the best here. Unsweetened coconut doesn’t have much of a taste because it doesn’t have any sweetener in it, so I don’t recommend this swap.

Vegan Butter: Melt Organics is my go-to for salted vegan butter sticks. These melt really well for this recipe! You can swap in with your favorite brand of vegan butter (make sure it’s salted, or add a pinch of salt into the melted butter, if it’s not).

Graham Cracker Crumbs: Use vegan graham cracker crumbs. There are brands that can be found in the natural/vegan foods aisle of most grocery stores. Different types of crackers will absorb moisture differently, so start off with less butter as the instructions state, and add more as needed to help the mixture press together.

  • To make it easier to lift the bars out and slice them cleanly, line your baking dish with parchment paper, letting the edges hang over the sides. This also makes cleanup easier!

Ingredients
  

  • cups vegan graham cracker crumbs
  • ½ cup salted vegan butter melted; reserve extra for greasing the pan
  • ½ cup vegan sweetened condensed milk at room temperature
  • ½ cup vegan semisweet chocolate chips
  • ½ cup raw walnuts chopped
  • ½ cup sweetened shredded coconut

Instructions
 

  • Preheat oven to 350F.
  • Lightly grease the baking pan with vegan butter, then line it with parchment paper.
  • Mix together the graham cracker crumbs and the melted butter in a bowl. Start with a half cup of butter, and add more as needed. You may not need the entire half cup – just add enough butter to help it all press together.
  • Use the bottom of a glass to press the graham cracker crust firmly into the pan.
  • Evenly spread the sweetened condensed milk over the crust.
  • Sprinkle on the chocolate chips, walnuts and then coconut. Gently press then down into the sweetened condensed milk.
  • Bake for 30 minutes, until the edges of the bars are golden-brown.
  • Once done, remove from the oven. Let them cool for at least 30 minutes. Refrigerate the bars to firm them up, if they're too soft. Once they're hard enough, cut them into 12 servings and enjoy!

    • Store in an airtight container in the refrigerator for up to one week, with parchment paper in between the layers.
