Vegan Cheese: Choose your favorite brand of vegan cheddar cheese. I love Violife brand, so I used their shredded cheddar in this recipe. Not all vegan cheeses are nut-free and soy-free, so if you have any allergies just double check which brand avoids those allergens.

Sourdough: I made this recipe with a sourdough baguette, which made mini sandwiches (a yummy appetizer!) as well as with regular-sized sourdough bread. You don’t even have to use sourdough, but any thick bread will work great. Just check the ingredients, since some breads have milk and eggs in them and aren’t vegan.

Equipment

  • Pastry Brush or butter knife

Ingredients
  

  • 2 pieces sourdough bread
  • 4 tbsp vegan cheddar cheese
  • 2 medium mushrooms sliced and panini pressed
  • black pepper as per taste
  • pink salt as per taste
  • Italian seasoning as per taste
  • 1 tbsp vegan butter
  • ½ tsp garlic paste

Instructions
 

  • In a small bowl, mix together the butter and garlic paste.
  • Using a pastry brush or a butter knife, lightly spread the mixture on both slices of bread.
  • In a panini press, add the sliced mushrooms. Leave them for one cycle of the press (it should automatically turn off when an item inside it is done toasting).
    If you don’t have a panini press, use a regular skillet or grill pan over medium heat. Press the food down with a spatula for that toasted texture.
  • Lay one slice of the sourdough on a plate. Evenly sprinkle the cheese over top, followed up salt, pepper and seasonings of choice (I used some italian seasoning). Place the toasted mushrooms on top, then add on the other slice of bread.
  • Put the sandwich in the panini press for one cycle, until it is all stuck together and the cheese is fully melted. Enjoy!
