Tamari: Tamari is a gluten-free, lower sodium version of soy sauce. You can use soy sauce instead, but you’ll need to reduce the salt added into the recipe as soy sauce is higher in sodium than tamari. Soy sauce is also not gluten-free, but tamari is.

Avocado Oil: Use olive oil, vegan butter or vegetable oil as a substitute.

Veggie Broth: Use vegetable stock instead of broth.

Cornstarch: Use rice flour or all-purpose flour instead.

Italian Seasoning Mix: This is a mix of dried herbs, such as oregano, thyme and basil. You can use a recipe to make your own at home. Or, buy a mix of different dried herbs such as dried thyme, basil, oregano, sage, rosemary, marjoram, parsley and other herbs separately and add them in.

Equipment

  • Medium Skillet

Ingredients
  

  • 1 tbsp avocado oil
  • 1 small white onion chopped
  • 1 medium garlic clove finely grated
  • 1 8 oz pack white mushrooms sliced
  • ¼ tbsp tamari
  • cups vegetable broth
  • 2 tbsp cornstarch or rice flour
  • 2 tsp Italian seasoning mix
  • pink salt add as needed
  • black pepper add as needed

Instructions
 

  • Heat the oil over medium heat in a skillet until hot. Add in the onions, garlic and mushrooms, stirring around for a few minutes until the onions are translucent.
  • Add in the broth, Italian seasoning, tamari and a little bit of salt and pepper. Stir for a minute, then whisk in the cornstarch to avoid clumps.
  • Reduce heat to low and simmer until thickened, stirring every few minutes, for about 20 minutes. It should be a rich brown color.
  • Once it's done, taste test the mixture and add more salt, pepper or seasonings as desired.
  • Remove from the heat and add the gravy to a serving bowl. Enjoy over top of mashed potatoes or your dish of choice!

    • Store in an airtight container in the refrigerator for 3 to 4 days.
