These vegan Oreo Dessert Chocolate Pudding Parfait Cups are perfect for a crowd – crunchy cookies, rich chocolate flavors and whipped cream!

Ingredients
  

  • vegan whipped cream

For the Oreo Layer

  • 6 regular Oreos finely chopped
  • 1 tbsp vegan butter melted

For the Chocolate Pudding

  • ¼ cup xylitol
  • 2 tbsp cacao powder
  • 1 tbsp cornstarch
  • 1 cup unsweetened oat milk
  • ½ tbsp vegan butter
  • ½ tsp vanilla extract
  • tsp pink salt

Instructions
 

For the Chocolate Pudding

  • In a saucepan, whisk together the xylitol, cacao, butter, cornstarch, salt and milk over medium heat.
  • Bring to a boil, then reduce the heat to low and whisk for 2-3 minutes. After this time, remove from the heat and stir in the vanilla.
  • Let the pudding cool for a half hour at room temperature. Then place it in the refrigerator for an hour.

Putting It All Together

  • After the pudding is chilled, separate it into four even servings. Additionally, separate the Oreo layer into four servings as well.
  • In two glass cups, take one part of the Oreo layer, followed by one part pudding, then a layer of whipped cream (eyeball as thick of a layer as you like).
  • Repeat this once more to have a parfait with six layers. Top with more Oreos. Repeat this layering with the second cup as well.
  • Serve. Enjoy it fresh!

Notes

  • Storage
    • Store the chocolate pudding in an airtight container in the refrigerator for up to two days. Do not layer the parfaits until ready to serve.
