Because of the healthy fats from the seeds and nut butter and the fiber from the oats, you’ll feel more full than if you just grabbed a sugary snack bar.
Substitutions
Peanut Butter: Use creamy or chunky, natural peanut butter. Natural peanut butter only contains one ingredient on the label – peanuts! The oils should rise to the top of the container (which is normal), so you’ll have to give it a good stir before using it.
Vanilla: Choose a high-quality vanilla extract, without additional caramel color or dyes. You can also use pure vanilla flavor, which is non-alcoholic so can’t have the “extract” label.
Rolled Oats: Substitute with quick oats instead of rolled oats (old fashioned oats). For those with a gluten sensitivity, use certified gluten-free oats. Do not use oat flour as a substitute.
Medjool Dates: Dates are a sweet treat (I like to call them nature’s candy)! They provide a natural energy boost alongside the maple syrup, so no other refined sugar is needed here. You can substitute for plump black raisins instead. If using dates, go for the softest, most caramel-like dates which are Medjool. Deglet Noor dates will work as well.
Chocolate Chips: Use semisweet vegan chocolate chips for best results. You can use dark chocolate chips if you would like a simple recipe that isn’t as high in added sugar. However, it won’t taste as good due to the chocolate being more bitter. Additionally, when choosing chocolate, check the label to make sure there are no dairy products added (like milk powder) so it is vegan.
Maple Syrup: Choose pure maple syrup, with only one ingredient on the label. You can also substitute another liquid sweetener, like agave nectar.

Vegan Peanut Butter Oatmeal Chocolate Chip Energy Balls
Equipment
- High-speed blender or food processor
Ingredients
- 2 tbsp pure maple syrup
- 2 tbsp Medjool dates pitted
- ¾ cup rolled oats
- ¼ cup creamy peanut butter
- 1 tbsp black chia seeds
- 2 tbsp brown flaxseeds
- ⅛ tsp vanilla extract
- pinch pink salt
- 2 tbsp mini vegan semisweet chocolate chips
Instructions
- Blend together all ingredients, except the chocolate chips, in a blender or food processor until a dough forms.
- Stir in the chocolate chips by hand.
- Shape the dough into 9 balls.
- Place them in a container, separated with layers of parchment paper in between to store. Enjoy!
